Our barrel aged wine vinegars are the result of the acidification, maturation-aging and refinement of wines(Lambrusco, Trebbiano… grapes) until a harmonious balance of taste and flavor is achieved. The product is aged more than 10 years in white Italian oak barrels. It is processed using the traditional system of Solera combined with vinegars of more than 15 years.
Our barrel aged Wine Vinegars are clear, deep red color and light bright straw yellow, free from any pronounced foreign flavor or odor. The flavor and the aroma are clean and characteristic of traditional Italian Wine Vinegars.
Use it in cooking, dressings, marinades, and pickling. When whisked with Dijon mustard and our Koroneiki extra virgin olive oil, the result is aromatic vinaigrette. For a sweet, tart and savory appetizer, drizzle a combination of the Barrel-Aged Red Wine Vinegar and our Hojiblanca EVOO over prosciutto-wrapped melon.
